The authors' of this latest volume discuss recent advances in chemistry research. Chapter One discusses the structural characteristics and composition of proanthocyanidins in grapes and wines, including the main factors that could determine PAs concentration. Chapter Two reviews the analytical methodologies devoted to the extraction, characterization and determination of proanthocyanidins in plants and plant-derived food products. Chapter Three describes a novel procedure for the extraction and isolation of proteoglycans from connective tissue. Chapter Four focuses on the analytical potential of porphyrins and metalloporphyrins with a particular emphasis on electroanalysis. Chapter Five analyzes S2 fluorescence of metalloporphyrins and its applications for photochemical tools. Chapter Six introduces spin-crossover phenomena of assembled coordination polymers.
