Abstract:
Quercetin and kaempferol are the dominant flavonoids in broccoli and many other
vegetables and fruits. Both compounds have been implicated in the suppression of proinflammatory
cytokine production. Because there is a strong link between inflammation
and diseases, several signaling pathways have been investigated as potential strategies for
therapeutic interventions using flavonoids. Quercetin and kaempferol are both strong
antioxidants, and have been shown to target multiple of such signaling pathways, of
which those involving Nf-κb, NRF2, MAPK, PI3K, and WNT/β-catenin are described
within this chapter. The limited numbers of human clinical trials with flavonoids have
yielded conflicting or inconclusive results thus far. However, the apparent pleiotropic
functions of both kaempferol and quercetin, and their propensity for modulating NRF2
and other signaling pathways, continue to render them interesting therapeutics in
inflammation and other diseases.
